Bissau Pepper Bites
Bissau Pepper Bites are a culinary delight inspired by the vibrant flavors of West Africa, particularly from Guinea-Bissau. Known for its rich and diverse culture, Guinea-Bissau's cuisine is a fusion of African and Portuguese influences. These savory bites are perfect for appetizers or as a delightful snack, featuring a rich combination of peppers and spices that are emblematic of the region's love for bold flavors.
Ingredients
- Bell Peppers - 3 (any color)
- Ground Beef - 500 grams
- Onion - 1 large, finely chopped
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Ground Coriander - 1 teaspoon
- Smoked Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Olive Oil - 2 tablespoons
- Tomato Paste - 2 tablespoons
- Cooked Rice - 1 cup
- Fresh Parsley - a handful, chopped
- Feta Cheese - 100 grams, crumbled
Preparation
Step 1: Prepare the Bell Peppers
Begin by washing the bell peppers thoroughly. Slice them in half lengthwise and remove the seeds and membranes, creating a cavity for the filling. Arrange the halved bell peppers on a baking tray, ready for stuffing.
Step 2: Cook the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until the onion becomes translucent. Stir in the ground beef, and cook until browned.
Add cumin, ground coriander, smoked paprika, salt, and black pepper to the beef mixture, ensuring even spice distribution. Mix in tomato paste for added depth and richness, followed by the cooked rice.
Remove from heat and stir in parsley and feta cheese, combining well.
Step 3: Stuff the Peppers
Spoon the seasoned beef and rice mixture into each bell pepper half. Fill generously, pressing lightly to compact the filling.
Cooking Process
- Preheat your oven to 180°C (350°F).
- Place the stuffed bell peppers in a preheated oven for about 25-30 minutes. Use a cooking timer to ensure precision.
- The peppers should be slightly tender, and the filling should be heated through. If desired, broil for an additional 2 minutes for a slightly charred top.
How to Enjoy
Bissau Pepper Bites are best enjoyed warm, straight from the oven. They make an excellent dish for gatherings or a simple and light dinner. Pair them with a crisp green salad to balance the bold flavors. These bites can be eaten as a hand-held treat or served on a plate with utensils.
