Ingredients
To make an authentic Calulu, you will need the following ingredients:
- Fish (e.g., cod or mackerel) - 500g
- Palm Oil - 100ml
- Onion - 2 large, sliced
- Tomatoes - 4 large, chopped
- Okra - 200g, sliced
- Spinach - 200g
- Eggplant - 1 medium, chopped
- Red Bell Pepper - 1 large, diced
- Garlic - 4 cloves, minced
- Bay Leaf - 2 leaves
- Salt to taste
- Black Pepper to taste
- Lemon - 1, to season
- Coconut Milk - 200ml
Preparation
Before starting the cooking process, it is important to properly prepare and season the ingredients. Begin by cleaning the fish and rubbing it with some salt and lemon juice. Let it marinate while you prepare the vegetables. Chop the tomatoes, onions, okra, eggplant, and red bell pepper. Wash the spinach thoroughly and set aside.
Cooking Process
Step 1: Frying the Fish
In a large pot, heat the palm oil over medium heat. Add the marinated fish and fry until it is golden brown on both sides. This should take approximately 5-7 minutes per side. Once browned, remove the fish from the pot and set it aside.
Step 2: Sautéing the Aromatics
In the same pot, add the sliced onions and minced garlic. Sauté until the onions become translucent and the garlic is fragrant. This should take about 3-4 minutes.
Step 3: Building the Flavor Base
Add the chopped tomatoes, eggplant, and red bell pepper into the pot along with the sautéed aromatics. Stir well and let them cook down until they form a rich and thick base. This will take approximately 10-15 minutes.
Step 4: Adding the Vegetables and Seasonings
Add the sliced okra and the bay leaves to the pot. Pour in the coconut milk and bring the mixture to a simmer. Season with salt and black pepper to taste. Let it cook for another 10 minutes, stirring occasionally.
Step 5: Finalizing the Calulu
Return the fried fish to the pot and add the washed spinach. Stir gently to combine all ingredients. Allow the calulu to simmer for an additional 10 minutes, ensuring all flavors meld together beautifully.
Cooking Time
The total cooking time for Calulu is approximately 60 minutes, including preparation and the various steps in the cooking process.
Serving and Enjoyment

For an authentic Angolan experience, garnish the dish with some extra lemon wedges and enjoy it with family or friends over a shared meal.
