Background and History
Chivito Energético is a powerful Uruguayan sandwich known for its robust flavors and thick layers. The dish is a staple in the diet of many Uruguayans and has made its way onto menus around the world.
Originating in Punta del Este, the story goes that the Chivito was first prepared by Antonio Carbonaro, owner of "El Mejillon Bar" in 1946, when a customer ordered a goat sandwich. As goat meat wasn't available, he improvised with what he had on hand — beef. This serendipity resulted in the creation of an energetic and protein-rich sandwich. Over the years, this culinary delight has evolved, with many variations adapted to suit different palates.
Ingredients

- Bacon - 3 slices
- Ham - 2 slices
- Mozzarella Cheese - 100g
- Mayonnaise - 2 tablespoons
- Tomato - 1, sliced
- Lettuce - A few leaves
- Green Pepper - 1, sliced
- Olives - 6, pitted and halved
- Oregano - 1 teaspoon
- Olive Oil - 1 tablespoon
- Baguette or Ciabatta Bread - 1 large
- Salt - To taste
- Black Pepper - To taste
Preparation
Step 1: Preparing the Ingredients
Begin by gathering all your ingredients. Ensure your beef tenderloin is at room temperature. This helps in cooking it evenly. Slice the green pepper into thin strips, and set aside. Wash the lettuce leaves and tomato, then slice the tomato into rounds.
Step 2: Cooking the Beef
Heat a grill pan over high heat and add olive oil. Season the beef tenderloin with salt, black pepper, and oregano. Cook on each side for 3-4 minutes or until your desired doneness is reached. Remove the beef and let it rest.
Step 3: Preparing the Other Ingredients
In the same pan, fry the bacon until crisp. Set aside. In a separate small skillet, fry the eggs sunny-side-up and set aside as well. Warm the ham slices in the skillet until slightly browned. Melt the mozzarella cheese over the ham during the last minute of cooking.
Step 4: Assembling the Sandwich
Toast the baguette or ciabatta bread lightly for extra crispness. Spread mayonnaise on one half of the bread. Layer the sandwich with lettuce, tomato, green pepper, and olives. Add the cooked beef, followed by bacon, ham topped with mozzarella cheese, and finally the eggs.
