Preparation
Make the Dough
To make the dough for Ege Toprak Böreği, start by sifting the flour into a large bowl. Add the salt and mix well. Create a well in the center and add the water and half of the olive oil. Mix the ingredients together until a dough forms. Knead the dough for about 10 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
Prepare the Filling
While the dough is resting, prepare the filling. Wash the spinach thoroughly to remove any dirt, then chop it coarsely. Dice the onion finely. Heat a tablespoon of olive oil in a pan over medium heat. Add the onion and sauté until they are soft and translucent. Add the spinach and cook until wilted. Remove from heat and let it cool. In a bowl, mix the cooled spinach mixture with crumbled feta cheese, chopped dill, and parsley. Add black pepper to taste and stir in a beaten egg to bind the mixture.
Cooking Process
Prepare Your Workspace
Clear a large surface and sprinkle it with some flour to prevent sticking. Divide the dough into 4 equal parts and roll each section into a ball.
Roll Out the Dough
Using a rolling pin, begin rolling one of the dough balls into a thin sheet, approximately 12 inches in diameter. Be careful to keep the dough even in thickness.
Assemble the Börek
Place the dough sheet on a greased baking tray. Spread one-third of the spinach and cheese filling over the dough, leaving a 1-inch border around the edge.
Layer the Dough
Roll out another dough ball to the same size and place it over the first layer of filling. Repeat the layering process with the remaining filling and dough sheets, finishing with a top layer of dough.
Bake the Börek
Brush the top of the börek with the remaining olive oil and a bit of yogurt for a glossy finish. Use a sharp knife to score the top layer into the desired size of portions, without cutting all the way through. Preheat your oven to 180°C (356°F) and bake the börek for about 30-40 minutes. Use a cooking timer to ensure perfect timing.
