Ingredients
- Chicken - 1 whole, cut into pieces
- Lemon - 2, juiced
- Garlic - 4 cloves, minced
- Ginger - 2 inches, grated
- Thyme - 1 tablespoon, dried
- Cinnamon - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Allspice - 1/2 teaspoon
- Brown sugar - 2 tablespoons
- Orange juice - 1 cup
- Scotch bonnet pepper - 1, finely chopped
- Coconut milk - 1 can
- Rice - 2 cups
- Bell pepper - 1, sliced
- Pineapple - 1 cup, cubed
- Green onion - 1/2 cup, chopped
- Coriander - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
Preparation
Begin by preparing the marinade for the chicken. In a large bowl, combine the juice of two lemons, garlic, ginger, thyme, cinnamon, nutmeg, allspice, and brown sugar. Stir in the orange juice and add the Scotch bonnet pepper. Mix everything thoroughly and add salt and black pepper to taste.
Place the chicken pieces in the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least four hours, preferably overnight, to allow the flavors to infuse into the meat.
In the meantime, rinse the rice thoroughly under cold water. Set it aside to drain.
Cooking Process
Cooking the Chicken
Preheat your oven to 375°F (190°C). Remove the chicken from the marinade and set the marinade aside. Heat olive oil in a large skillet over medium-high heat. Brown the chicken pieces on all sides, then transfer them to a baking dish. Pour the reserved marinade over the browned chicken and cover the dish with foil.
Bake the chicken for 45-50 minutes, or until it is cooked through and tender. Turn on the grill function for the last 5 minutes to give the chicken a nice, crispy finish.
Cooking the Rice
In a medium saucepan, combine the drained rice, coconut milk, 2 cups of water, and a pinch of salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the saucepan with a lid. Simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid. Fluff the rice with a fork and stir in the bell pepper and pineapple.
How to Enjoy
Serve the chicken and rice hot, garnished with chopped green onion and coriander. This dish pairs beautifully with a refreshing citrus salad or grilled vegetables. To enhance your dining experience, you can also play some Caribbean music to create a festive atmosphere. Allow the alluring aromas and vibrant flavors of Grenadian Ember Bliss to transport you to the serene shores of Grenada.
