Hassanya Bites
Introduction
Hassanya Bites are a delightful snack inspired by the rich culinary traditions of the Hassanya-speaking people of the Maghreb region, notably in Mauritania, Morocco, and parts of Algeria. These bites are a perfect fusion of North African flavors and spices, often enjoyed during social gatherings and festive celebrations.
The roots of Hassanya cuisine date back centuries and reflect a blend of Berber, Arab, and even Sub-Saharan influences. With a primarily nomadic lifestyle, the ingredients used in Hassanya cuisine have traditionally focused on those that are easily preserved or found locally, such as dates, couscous, and various spices.
Ingredients
- Dates - 200g, pitted and chopped
- Couscous - 150g
- Spices (cumin, coriander, and paprika) - 1 tbsp each
- Honey - 3 tbsp
- Almonds - 100g, toasted and chopped
- Chickpeas - 200g, cooked and mashed
- Olive Oil - 2 tbsp
- Lemon - 1, juiced
- Parsley - 2 tbsp, chopped
- Salt and pepper to taste
Preparation
Begin your Hassanya Bites by preparing the couscous. Bring 300ml of water to a boil in a saucepan. Remove from heat, add the couscous, and cover the pan. Allow it to sit for about 5 minutes, then fluff it with a fork. Set aside.
Mixing the Ingredients
In a large bowl, combine the prepared couscous with the chopped dates, mashed chickpeas, chopped almonds, and spices. Mix well.
In a small bowl, whisk together the olive oil, honey, and lemon juice. Pour this mixture over the couscous blend and mix thoroughly to ensure every part is coated.

Preheat your oven to 180°C (350°F). Shape the mixture into small, bite-sized balls and place them on a baking tray lined with parchment paper.
Bake in the preheated oven for about 15-20 minutes or until the bites start to turn golden and firm up. Make sure to use a cooking timer to ensure they're cooked perfectly.
