Preparing the Dough

  1. In a large mixing bowl, combine the glutinous rice flour, sugar, baking powder, and salt.
  2. Slowly add the water and vegetable oil while mixing, until a smooth dough forms.

Preparing the Filling

  1. In a medium bowl, mix the red bean paste with the chopped chestnuts.
  2. Divide the mixture into small balls, approximately 1 tablespoon each, and set aside.

Assembling the Mooncake

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Divide the rested dough into equal portions, about 1/4 cup each. Flatten each piece into a disc.
  3. Place a ball of filling in the center of each disc. Gently wrap the dough around the filling, pinching the seams to seal.
