Kesävarnyik
Kesävarnyik is a traditional Finnish dish, often enjoyed during the warm summer months when fresh ingredients are abundant. This dish is a delightful combination of fresh greens, herbs, and seasonal vegetables, symbolizing the arrival of summer in Finland. The name 'Kesävarnyik' itself derives from the Finnish words for summer ('kesä') and an old term that refers to a rustic mixture or scramble ('varnyik').
Ingredients
- Potato - 500g, peeled and diced
- Carrot - 300g, peeled and sliced
- Green Peas - 200g, shelled
- Dill - a small bunch, finely chopped
- Filo Pastry - 500g pack
- Eggs - 4, large
- Cream - 200ml
- Butter - 100g, melted
- Salt - to taste
- Black Pepper - freshly ground, to taste
- Olive Oil - 2 tablespoons
Preparation
To start preparing the potato portion, bring a large pot of water to a boil. Add a pinch of salt to the water and toss in the diced potato and sliced carrot. Cook them until they are just fork-tender, about 10 minutes. Remove them from the pot using a slotted spoon and set aside.
In the same boiling water, add the green peas and cook for about 2-3 minutes until they become bright green but not mushy. Drain and set aside.
Assembling the Dish
Preheat your oven to 180°C (350°F).
In a large mixing bowl, beat the eggs together with the cream, dill, a pinch of salt, and a dash of black pepper. Stir in the potato, carrot, and green peas.
Brush each sheet of filo pastry with butter and layer them into a large baking dish to form the base and sides of the pie, making sure they overlap slightly. Pour in the egg and vegetable mixture.
Baking and Serving
Fold over any overhanging pastry edges to enclose the filling. Brush the top with more melted butter and bake in the oven for about 35-40 minutes or until the top is golden brown and crisp.
Let it cool slightly before serving. When ready, cut into squares and serve warm or at room temperature. Pair with a light salad or enjoy it on its own as a satisfying and hearty meal.
