The traditional Greek Koulouri Kritharokoulouki, often simply known as Koulouri, is a ring bread typically encrusted with sesame seeds. Its origins trace back to Byzantine times, served as a staple across regions due to its simple but fulfilling nature. Found across Greece, it’s particularly popular in Thessaloniki as a street food favorite. Traditionally, it was a humble snack, able to be transported easily by traders.
Ingredients
- All-purpose flour - 500g
- Water - 250ml
- Sugar - 50g
- Dry yeast - 7g
- Salt - 5g
- Olive oil - 30ml
- Sesame seeds - 200g
- Honey - 30g
Preparation Steps
Step 1: Activating the Yeast
In a small bowl, combine warm water and sugar. Mix until the sugar dissolves completely. Sprinkle the dry yeast over the top and allow it to rest until frothy, approximately 10-15 minutes.
Step 2: Making the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the activated yeast mixture and olive oil. Mix until the mixture forms a mass then knead for about 10 minutes, until you have a smooth and elastic dough.
Step 3: Allowing the Dough to Rise
Form the dough into a ball, place it into a lightly greased bowl, and cover with a damp towel. Leave it in a warm place to rise for about 1-2 hours, until it has doubled in size.

Punch the dough down to release air. Divide it into equal portions, rolling each into a rope about a foot in length. Form into rings by pinching the ends together to ensure they do not separate while baking.
Step 3: Coating with Honey Syrup and Sesame
In a shallow dish, whisk together warm water and honey. Dip each ring into the honey mixture, coating completely, then immediately roll in the sesame seeds, ensuring each ring is well-covered.
Step 4: Baking
Place the rings on the prepared baking sheet, ensuring to leave enough space between them. Bake in the preheated oven for approximately 15 minutes, or until they are golden brown and crispy on the outside.
