Preparation
Start by preparing the Pork Shoulder. In a large mixing bowl, combine the Lime and Orange juice, Garlic, Cumin Powder, Oregano, Salt, and Pepper. Mix well to form a marinade. Add the Pork Shoulder chunks, ensuring they are thoroughly coated. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
Cooking Instructions
- Preheat your oven to 300°F (150°C).
- In a large ovenproof pot or Dutch oven, heat the Olive Oil over medium-high heat. Add the marinated Pork Shoulder chunks in batches, searing until browned on all sides. Remove the pork and set aside.
- Add the Onion and Red Bell Pepper to the pot, sautéing until softened, about 5 minutes.
- Return the Pork Shoulder to the pot. Cover and transfer to the preheated oven.
- Cook the pork for approximately 3 hours, or until tender and easily shredded. For timing assistance, use a cooking timer.
Assembling the Kuban Crunch
Remove the tender pork from the pot and shred it using two forks. Reserve the cooking juices.
- Serve the shredded pork on Tortillas, drizzling a bit of the reserved juices over the top for added flavor.
- Garnish with freshly chopped Cilantro.
