Preparation
Preparing Kuban Kolobok starts with a well-risen dough that is flavorful and soft. First, activate the yeast by mixing it with a small portion of warm water and a pinch of sugar. Let the mixture sit for about 10 minutes until it becomes frothy.
Combine the flour, remaining sugar, and salt in a large mixing bowl. In a separate bowl, beat the eggs and add the activated yeast mixture, melted butter, and remaining water. Gradually, add the wet ingredients to the dry and mix until a dough forms. Knead the dough on a floured surface until smooth and elastic. Cover and let it rise in a warm place for about an hour, or until it has doubled in size.
Cooking Process
Preheat the oven to 180°C (356°F). As you wait, prepare the filling by grating the cheese and mixing it with chopped dill. Once the dough has risen, punch it down to release the air and divide it into equal parts based on the size of Koloboks you desire.
Flat each piece of dough on a floured surface and add a generous portion of cheese and dill mixture at the center. Form each dough piece into a ball by pulling the edges over the filling and pinching to seal.
Place the filled Koloboks on a baking tray lined with parchment paper. Brush them with a beaten egg to ensure a golden, shiny crust.
