Lamington Loaf
History and Background
Originating in Australia, the Lamington is a beloved dessert known for its cube shape, sponge cake texture, and chocolate-coconut coating. Named after Lord Lamington, a former Governor of Queensland, these sweet treats have a whimsical backstory often linked to culinary accidents or innovative chefs.
Traditionally, Lamingtons are served in cube form, but the ingenious idea of transforming them into a loaf provides a new twist on the classic. This approach not only makes for easier preparation and serving but also blends the traditional charm with modern baking practices.
Ingredients
- All-purpose flour - 2 cups
- Baking powder - 2 teaspoons
- Salt - 1/2 teaspoon
- Unsalted butter - 1/2 cup, softened
- Granulated sugar - 1 cup

- Vanilla extract - 1 teaspoon

- Shredded coconut - 2 cups

- Powdered sugar - 2 cups

Preparation
Step 1: Preheat and Prepare the Loaf Tin
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf tin and line it with parchment paper, allowing some overhang for easy removal.
Step 2: Mix Dry Ingredients
In a medium-sized bowl, sift together flour, baking powder, and salt. Stir until well combined.
Step 3: Cream the Butter and Sugar
In a large bowl, beat butter and sugar together until it becomes light and fluffy. This process should take about 3-5 minutes.
Step 4: Add Eggs and Vanilla
Gradually add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.
Step 5: Combine Wet and Dry Ingredients
Alternately add the dry ingredient mixture and milk to the butter mixture, beginning and ending with the flour. Mix until just combined, being careful not to overmix.

Once baked, let the loaf cool in the tin for 10 minutes, then use the parchment paper to remove it and place on a wire rack to cool completely.
