Preparation of Pļockas
Start by activating the yeast. Warm the milk slightly and dissolve the sugar in it. Add the yeast and let it sit for about 10 minutes until frothy.
In a large bowl, mix the flour and salt. Make a well in the center and pour in the yeasty milk mixture. Add butter that is melted but not hot, followed by the eggs. Combine the ingredients until they form a sticky dough.
Transfer the dough onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. Place the dough back in the bowl, cover, and allow it to rise in a warm place for about 1 to 1.5 hours or until doubled in size.
Shaping and Filling
After the dough has risen, punch it down gently and roll it out into a large rectangle about half an inch thick. Spread a generous amount of jam over the entire surface and sprinkle with poppy seeds.
Carefully roll the dough lengthwise to form a log. Slice the log into pieces about 2 inches thick and place the slices cut side down on a lined baking sheet. Cover them with a towel and let them rise for another 30 minutes.
Cooking Process
Preheat your oven to 180°C (350°F). Once the Pļockas have risen, brush them with a beaten egg to achieve a glossy finish. Place them in the oven and bake for 25-30 minutes or until they are golden brown and cooked through.
