Lavender Honey Nougat
Introduction to Lavender Honey Nougat
Lavender Honey Nougat is a delightful confectionery that combines the delicate floral notes of lavender with the natural sweetness of honey. This nougat has been cherished in Mediterranean regions, especially in France and Italy, for centuries and is often enjoyed as a festive treat during special occasions. The melding of these ingredients not only offers a unique taste profile but also provides a charming aroma that can soothe the senses. Making nougat is an art that requires patience and precision, but the results are always worth the effort.
Ingredients
- Sugar - 400g
- Honey - 300g
- Glucose Syrup - 150g
- Water - 100ml
- Egg Whites - 2 large
- Lavender - 1 tablespoon dried culinary grade
- Whole Almonds - 200g
- Pistachios - 100g
- Salt - A pinch
- Edible Rice Paper - As needed to line the tray
Preparation Steps
Begin by preparing your ingredients. Measure out the sugar, honey, and glucose syrup into separate saucepans. Separate the egg whites from the yolks in preparation for making the nougat base.
Preheat your oven to 150°C (300°F) and toast the whole almonds and pistachios for about 10 minutes until they are golden brown and aromatic. This intensifies their flavor.
Cooking Process
Sugar Syrup Preparation
In a saucepan, mix the water with the measured sugar. Place it over medium heat and allow it to dissolve, then increase the heat until it reaches a simmer. Use a candy thermometer to monitor the temperature until it reaches 145°C (293°F).
Simultaneously, in another saucepan, heat the honey. Bring it to a gentle boil and keep it warm while your sugar syrup reaches the desired temperature.
Nougat Base
As your syrups are cooking, begin whisking the egg whites in a clean mixing bowl until they form soft peaks. Gradually, very carefully, pour the hot sugar syrup in a steady stream into the egg whites while continuously whisking. Ensure your sugar syrup and egg whites are well combined for a glossy meringue.
Once incorporated, slowly add the honey into the nougat mixture, still beating at medium-high speed until the mixture becomes thick and holds its shape.
Combining Ingredients
Gently fold in the toasted almonds, pistachios, and lavender into the nougat mixture, taking care to maintain the aeration.
Immediately transfer the mixture onto a baking sheet lined with edible rice paper. Use a spatula to spread it evenly. Place another sheet of edible rice paper on top and press lightly to smooth out the surface.
Setting the Nougat
Allow the nougat to set at room temperature for at least 4 hours or ideally overnight. This gives it enough time to firm up and become chewy.
Serving Suggestions
Once set, use a sharp knife to cut the nougat into bite-sized pieces. Serve it as a sweet treat after meals, paired with a cup of tea or coffee, or even as part of an elaborate dessert platter. Lavender Honey Nougat also makes for a beautifully packaged gift for loved ones, celebrating the fusion of classic flavors and culinary artistry.
