- Banana leaves (for wrapping)
- Chicken broth (2 cups)
- Coriander (1/2 cup, fresh, chopped)
- Cooking oil (2 tablespoons)
Preparation
Step 1: Marinate the Chicken
In a large bowl, combine the chicken pieces with garlic, ginger, black pepper, and a pinch of salt. Ensure the chicken is evenly coated with the spices. Cover and let it marinate in the refrigerator for at least one hour.
Step 2: Prepare the Sauce
Heat cooking oil in a pan over medium heat. Sauté the chopped onion until translucent, then add the green bell peppers and red bell peppers. Cook until they begin to soften. Stir in the tomato puree, adding the remaining black pepper and salt to taste.
Once the mixture simmers, stir in the peanut butter and gradually add chicken broth, mixing well to create a smooth, rich sauce. Allow the sauce to cook for about 10 minutes, stirring occasionally.

Step 3: Assemble the Wraps
Preheat your oven to 350°F (175°C) or prepare a traditional steam pot. Lay out the banana leaves and place a portion of marinated chicken onto each leaf, followed by a generous ladle of the pepper sauce. Carefully fold the leaves to form secure parcels, tying them with string if necessary.

Arrange the wrapped parcels in a steamer or place them in a baking dish with a rack, adding water to create steam. Cover with additional banana leaves or foil to lock in the moisture. Remove the Luwombo parcels from heat and let them rest for a few minutes. Carefully unwrap the banana leaves to reveal the tender, flavorful chicken. Serve hot, garnished with fresh coriander.
