Mentás Krémes
Background and History
Mentás Krémes is a delightful Hungarian dessert known for its soft, creamy layers and a refreshing mint flavor. This dessert is an interesting twist on the traditional Krémes, which is a popular pastry in Central Europe. The classic Krémes features layers of puff pastry filled with a rich custard cream, and this version incorporates mint to deliver a fresh, invigorating taste.
The origins of Krémes can be traced back to the times of the Austro-Hungarian Empire where pastries were a staple treat. Over the years, chefs and home bakers have experimented with different flavors and ingredients to create variations like the Mentás Krémes. The use of mint, a favorite herb in Hungarian cooking, not only adds flavor but also imparts a beautiful aroma to the dessert. Traditionally served during holidays and special occasions, Mentás Krémes is a perfect choice for those who want to impress their guests with a unique and elegant sweet treat.
Ingredients
- Puff Pastry (2 sheets)
- Milk (500 ml)
- Sugar (150 g)
- Vanilla Extract (1 tsp)
- Eggs (4 yolks)
- Cornstarch (50 g)
- Mint Leaves (10-15 leaves, chopped)
- Whipping Cream (200 ml)
- Powdered Sugar for dusting
Preparation
Step 1: Preparing the Mint-Infused Milk
Begin by heating the milk in a saucepan over medium heat. Add the chopped mint leaves and bring to a gentle simmer, allowing the mint to infuse its flavor into the milk. Once the milk is infused, remove the saucepan from the heat and let it cool slightly. Strain the mint leaves from the milk and set aside.
Step 2: Making the Custard Filling
In a mixing bowl, whisk together the sugar, egg yolks, and cornstarch until well combined. Slowly add the mint-infused milk into the mixture, stirring constantly to prevent any lumps from forming.
Transfer the mixture back into the saucepan and cook over medium heat, stirring continuously, until the custard thickens and coats the back of a spoon. Remove from heat and stir in the vanilla extract. Allow the custard to cool completely.
Step 3: Baking the Puff Pastry
Preheat your oven to 200°C (392°F). Roll out the puff pastry sheets on a floured surface and place them onto a baking tray lined with parchment paper. Prick the surface of the puff pastry with a fork to prevent it from puffing excessively during baking.
Bake the puff pastry sheets in the preheated oven for 15-20 minutes, or until golden brown and crispy. Remove from the oven and let them cool to room temperature.
Step 4: Assembling the Mentás Krémes
Place one sheet of the baked puff pastry on a serving platter. Spread the cooled custard evenly over the layer. Gently lay the second sheet of puff pastry on top of the custard.
Whip the whipping cream until stiff peaks form, and spread it over the top puff pastry layer. Dust generously with powdered sugar to finish.
