Preparation
Step 1: Prepare the Barley

Bring it to a boil, reduce the heat, and let it simmer for about 25 minutes. Use a cooking timer to keep track. Once the barley is tender, drain any excess water and set aside to cool.
Step 2: Roast the Beets
Preheat your oven to 400°F. Peel and dice 3 medium-sized beets. Toss them with a drizzle of olive oil and spread evenly on a baking sheet. Roast the beets for about 30-40 minutes or until they are tender and can be pierced with a fork. Ensure to check with a cooking timer for precise timing. Step 3: Prepare the Kale
