Ingredients
- Chicken - 500g, preferably free-range for better flavor.
- Lemons - 2, juiced and zested.
- Olive Oil - 4 tablespoons for marination and cooking.
- Garlic - 4 cloves, finely chopped.
- Shallots - 2, thinly sliced.
- Cherry Tomatoes - 250g, halved.
- Herbes de Provence - 2 teaspoons, dried or fresh.
- White Wine - 100ml, preferably a dry variety.
- Green Olives - 100g, pitted and sliced.
- Capers - 1 tablespoon, drained.
- Parsley - Fresh, for garnish.
- Salt and Pepper to taste.
Preparation
- Begin by preparing the chicken. Cut the chicken into bite-sized pieces. Place in a large bowl and add the juice and zest of the lemons, two tablespoons of olive oil, garlic, herbes de Provence, salt, and pepper to taste. Mix well to coat the chicken thoroughly and let sit for at least 30 minutes to marinate.
- While the chicken is marinating, prepare the cherry tomatoes by washing them and cutting them in half. Set aside.
- Slice the shallots thinly and set these aside as well.
Cooking Process
- Heat the remaining two tablespoons of olive oil in a large skillet over medium-high heat.
- Add the marinated chicken to the skillet, cooking until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced shallots and cook until they start to become translucent.
- Add the cherry tomatoes to the skillet, cooking just until they start to soften.
- Pour in the white wine and give the mixture a good stir, scraping up any flavorful bits from the bottom of the skillet.
- Return the chicken to the skillet, mixing it with the tomatoes and shallots. Add the green olives and capers, stirring to combine everything thoroughly.
- Reduce the heat to medium and let the entire dish simmer for an additional 10-15 minutes to allow all the flavors to meld well. Ensure chicken is thoroughly cooked before serving.
