Ingredients
- Octopus - 500g, cleaned and cut into bite-sized pieces

- Soy sauce - 100ml
- Mirin - 50ml
- Sugar - 50g
- Dried bonito flakes - 20g
- Seaweed powder - 10g
- Mayonnaise - 100ml
- Olive oil - for frying
- Salt and pepper - to taste
Preparation
Make the Takoyaki Batter
In a large mixing bowl, combine the tempura flour, two beaten eggs, and a cup of cold water. Whisk until you have a smooth, lump-free batter.
Prepare the Sauce
In a saucepan over medium heat, combine the soy sauce, mirin, and sugar. Stir occasionally until the sugar dissolves, and the sauce thickens slightly. Remove from heat and let it cool.
Cooking Process
Cook the Octopus
