Pinhão Trufado
Background of Pinhão Trufado
Pinhão Trufado is a delightful fusion dish that marries the earthy and nutty flavor of pinhão, the seed of the Araucaria tree, with rich and indulgent chocolate. Traditionally enjoyed in the southern regions of Brazil, particularly in Paraná, Santa Catarina, and Rio Grande do Sul, pinhão is often consumed during the Festa Junina celebrations, where it is roasted or boiled. Trufado, meaning “truffled,” adds a luxurious twist, creating an elegant dessert that celebrates both local flavor and culinary creativity.
Ingredients
- Pinhão – 500g, shelled and cooked
- Dark chocolate – 200g, preferably 70% cocoa or higher
- Sweetened condensed milk – 1 can (395g)
- Cocoa powder – 2 tablespoons
- Unsalted butter – 2 tablespoons
- Heavy cream – 200ml
- Vanilla extract – 1 teaspoon
- Sugar – optional, based on preference
Preparation Steps
Step 1: Preparing the Pinhão
To begin, ensure your pinhão is thoroughly cooked. You can boil them in salted water for about 40 minutes until they are tender. Once cooked, shelled the pinhão by making a small incision in the skin and gently peeling it away. Set them aside to cool.
Step 2: Making the Chocolate Truffle Mixture
In a medium saucepan, melt the unsalted butter over low heat. Add the sweetened condensed milk and stir continuously to avoid burning. Slowly mix in the cocoa powder until fully incorporated. Break the dark chocolate into small pieces and add it to the mixture. Stir until all the chocolate is melted and smooth.
Step 3: Blending the Pinhão
In a food processor, blend the cooked pinhão into a paste. You can add a little bit of heavy cream to make the blending process smoother. Once a smooth paste is formed, combine it with the chocolate mixture. Add the vanilla extract for extra aroma and flavor, and if desired, some sugar for additional sweetness. Stir until fully combined.
Step 4: Setting the Mixture
Pour the mixture into a greased baking dish, spreading it evenly. Cover the dish with a plastic wrap and refrigerate for at least 3 to 4 hours or until it is firm enough to form into balls. You could use a timer to help keep track of this period.
Step 5: Forming the Truffles
Once the mixture has set, remove it from the refrigerator. Using a spoon, scoop out small portions and roll them into balls with your hands. If the mixture feels too sticky, you can lightly dust your palms with cocoa powder to prevent sticking.
Cooking Process
No additional cooking is required after setting the truffles. Feel free to roll these in extra cocoa powder, grated dark chocolate, or crushed pinhão pieces for an additional layer of texture and flavor.
Enjoying Pinhão Trufado
To enjoy Pinhão Trufado, it is best served chilled. These can be paired with a glass of fine wine or a hot cup of coffee to enhance the cocoa flavors. Perfect as a post-dinner dessert, they can also be presented beautifully for special occasions or as part of a sophisticated candy platter. The rich flavor profile of the dessert is a testament to both the cacao and the regional specialty seed, offering a unique taste experience.
