Ingredients

- 3 Egg Yolks, beaten

Preparation
Making the Filling
Combine 1 cup of sugar, 1/4 cup of cornstarch, and a pinch of salt in a medium-sized saucepan. Gradually stir in 2 cups of water, then add the lemon juice, lemon zest, lime juice, and lime zest. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
Whisk a small amount of hot mixture into the 3 beaten egg yolks to temper them. Returned tempered egg yolks to the saucepan and boil for another 2 minutes, stirring constantly. Remove from heat and stir in 2 tablespoons of butter until melted and smooth. Pour the filling into the pre-baked pie crust.
Whipping the Cream
In a chilled mixing bowl, beat 1 cup of whipping cream until soft peaks form. Gradually add in 2 tablespoons of confectioners sugar and 1 teaspoon of vanilla extract, continuing to beat until stiff peaks form. Carefully spread the whipped cream over the cooled pie filling.
