Background and History
Ptichye Moloko, also known as "Bird's Milk," is a delicacy that originates from Eastern Europe. Ingredients
- Eggs - 5 large, separated
- Sugar - 1 cup
- Milk - 2 cups
- Gelatin - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Butter - 2 tablespoons
- Dark chocolate - 200g
- Heavy cream - 1 cup
- Lemon juice - 1 tablespoon
Preparation
Step 1: Preparing the Gelatin Mixture
Dissolve the gelatin in half a cup of cold milk. Allow it to bloom for about 10 minutes.
Step 2: Egg Base
In a double boiler, gently heat the milk along with the vanilla extract and half the sugar, stirring until the sugar dissolves.
In another bowl, whisk the egg yolks with the remaining sugar until light and pale.
Gradually temper the warmed milk mixture into the yolks, stirring continuously to prevent the eggs from curdling. Return the mixture to the double boiler and stir until it thickens to coat the back of a spoon.
Step 3: Incorporating the Gelatin
Remove the egg and milk mixture from heat, and immediately stir in the bloomed gelatin. Continue to stir until the gelatin is completely dissolved. Allow it to cool slightly.
Step 4: Meringue
In a clean bowl, beat the egg whites to soft peaks. Add the lemon juice and continue to beat until stiff peaks form.
Carefully fold the meringue into the egg and gelatin mixture, ensuring not to deflate the volume. Pour the mixture into a prepared mold and refrigerate for at least 4 hours until set.
Step 5: Chocolate Ganache
In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the dark chocolate and butter. Let it sit for a few minutes before stirring to create a smooth ganache.
Serving Ptichye Moloko
Once the dessert is set, unmold it onto a serving plate and pour the chocolate ganache over the top, letting it cascade down the sides for an elegant finish. Slice the Ptichye Moloko and serve chilled.
