Quinoa Tambo

- Corn - 1 cup (fresh or frozen)
- Tomatoes - 2, chopped

- Avocado - 1, sliced (optional)
Preparation
Step 1: Preparing the Quinoa
- Rinse the quinoa under cold running water using a fine mesh strainer.
- In a pot, bring 2 cups of water to a boil.
- Add the rinsed quinoa to the boiling water.
- Reduce the heat, cover, and let it simmer for about 15 minutes, or until all water is absorbed. You can set a cooking timer for better timing.
- Remove from heat and let it sit covered for 5 more minutes.
- Fluff with a fork and set aside.
