Introduction to Shekerbura
Shekerbura is a traditional pastry originating from Azerbaijan, often lovingly prepared and enjoyed during the festive holiday of Novruz Bayram, which marks the arrival of spring. This iconic treat is known for its half-moon shape and intricate patterns that adorn its surface, usually formed with the tines of a special pinching tool or fork. Its unique taste comes from a rich filling made of ground nuts, sugar, and aromatic cardamom. The word "Shekerbura" stems from the Persian 'shakar', meaning sugar, and 'burek', meaning pie. This delicious pastry holds great cultural significance and is a symbol of sweetness, friendship, and new beginnings.
Ingredients
Pastry Dough
- Flour - 500 grams
- Butter - 200 grams
- Egg yolks - 2
- Milk - 100 ml
- Sugar - 50 grams
- Salt - 1/2 teaspoon
- Active dry yeast - 7 grams
Filling
- Finely ground nuts (almonds, hazelnuts, or walnuts) - 300 grams
- Powdered sugar - 200 grams
- Ground cardamom - 1 teaspoon
Preparation
1. Preparing the Pastry Dough
- Start by sifting the flour into a large mixing bowl.
- Add butter and mix using your fingertips until the mixture resembles breadcrumbs.
- In a separate bowl, whisk together the egg yolks, milk, and a pinch of salt.
- Mix the wet ingredients into the flour mixture, then add the active yeast and sugar. Knead until the dough is smooth and elastic.
- Cover the dough with a damp cloth and let it rest for about 1 hour in a warm place until it doubles in size.
2. Making the Filling
- Combine the ground nuts, powdered sugar, and cardamom in a bowl.
- Mix well to ensure that the cardamom is evenly distributed throughout the sugar and nuts mixture.
Cooking Process
1. Assembling the Shekerbura
- Preheat your oven to 180°C (350°F).
- Divide the dough into small lemon-sized balls. Roll each piece into a circle about 3-4 mm thick.
- Place a tablespoon of nut filling in the center of each circle.
- Fold the dough over the filling to make a half-moon shape, pinching the edges to seal.
- Use the traditional pattern-making tool or fork to create a decorative design on the edges.
2. Baking the Shekerbura
- Arrange the pastries on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until the tops are lightly golden.
- Remove from the oven and allow them to cool.
