Sundal Bliss
Introduction
Sundal is a traditional South Indian dish often made during festivals and special occasions. It is particularly popular during the Hindu festival of Navaratri, where it is offered as a prasad (offering) and shared with friends and family. Sundal is a protein-rich snack prepared with different types of legumes, seasoned with spices and garnished with fresh coconut. Ingredients
- Chickpeas - 1 cup
- Salt - to taste
- Turmeric - 1/4 teaspoon
- Fresh Coconut - 1/4 cup, grated
- Mustard Seeds - 1 teaspoon
- Urad Dal - 1 teaspoon
- Dried Red Chili - 2, broken into pieces
- Curry Leaves - a sprig
- Coconut Oil - 1 tablespoon
- Hing (Asafoetida) - a pinch
- Green Chilies - 2, finely chopped
- Lemon - 1, juiced
- Coriander Leaves - for garnish
Preparation
Soaking the Chickpeas
Start by soaking the chickpeas in enough water overnight or for about 8-10 hours. This helps in softening them, allowing them to cook faster and improve their digestibility.
Cooking the Chickpeas
After soaking, rinse the chickpeas thoroughly and transfer them to a pressure cooker. Add enough water to cover them and a pinch of turmeric and salt. Cooking Process
Tempering the Spices
In a pan, heat coconut oil over medium heat. Add the mustard seeds and let them splutter. Follow up with the urad dal and fry until it turns golden brown.

Add the dried red chili, a pinch of hing, and curry leaves. Sauté for a few seconds until the aroma fills your kitchen. Then, add the green chilies and fry for another minute.
Combining Chickpeas and Seasoning
