Thessaloniki Koulouria
Introduction to Thessaloniki Koulouria
Koulouri Thessalonikis is a beloved Greek bread that hails from the vibrant city of Thessaloniki. Known for its crispy exterior and soft inside, this bagel-like bread is a staple in Greek bakeries and a popular street snack. Its rich history can be traced back to the Byzantine era, where it was once enjoyed by the city's diverse inhabitants. Today, the Koulouri is a delicious testament to Thessaloniki's culinary heritage.
Ingredients
- All-purpose flour - 500g
- Warm water - 300ml
- Dry yeast - 10g
- Granulated sugar - 50g
- Salt - 10g
- Olive oil - 50ml
- Sesame seeds - 150g
- Baking soda - 5g
Preparation
Step 1: Preparing the Dough
In a large mixing bowl, combine dry yeast, sugar, and warm water. Stir gently to activate the yeast and let it sit for about 10 minutes until it becomes frothy.
Next, add the flour, salt, and olive oil to the yeast mixture. Knead the ingredients together until a smooth, elastic dough begins to form. This should take about 10 minutes of vigorous kneading.
Form the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth and let it rise for approximately 1.5 hours in a warm spot, or until it doubles in size.
Step 2: Shaping the Koulouria
Once the dough has risen, punch it down to release excess air, then divide it into equal-sized pieces. Roll each piece into a rope about 30cm long.
Join the ends of each rope to form a circular shape, pressing tightly to seal the dough. Arrange each piece on a baking tray lined with parchment paper.
Step 3: Coating the Koulouria
Preheat your oven to 200°C (390°F).
In a separate shallow bowl, dissolve the baking soda in warm water. Dip each dough ring into the solution, then immediately coat with sesame seeds, ensuring a generous and even coating.
Cooking Process
Place the baking trays in the preheated oven and bake for about 20 minutes or until the koulouria are golden brown. Use a cooking timer to track the cooking time.
Once baked, remove the koulouria from the oven and let them cool slightly on a wire rack to maintain their crispiness.
