Cooking Process

Boiling the Maple Syrup
- Pour the maple syrup into a medium-sized pot. The quantity can vary depending on how many people you wish to serve, but typically you will use at least two cups.
- Place the pot on medium-high heat and bring the maple syrup to a boil. As it boils, keep a close eye on it to prevent boiling over.
- Using a candy thermometer, heat the maple syrup until it reaches 235°F (113°C). This ensures the syrup is concentrated enough to be turned into taffy.
- If you do not have a thermometer, you will need to monitor the cooking timer and its consistency. Boiling should take between 4–5 minutes for the maple syrup to reach the soft ball stage.
- Once the syrup has reached the proper temperature, immediately remove from the heat to prevent crystallization.
Forming the Taffy
- Take the hot maple syrup and carefully pour it onto the prepared snow, drawing strips approximately 8 inches long each.
- Once poured, allow the syrup to cool for a few seconds. You will know it is ready when it starts to look less like syrup and more like a gel-like taffy.
- Immediately use a wooden stick and press it down at one end of a strip. Roll the taffy onto the stick by lifting and wrapping it around the stick.
- Repeat with remaining syrup strips until all the taffy is collected.
