Tufahije
Tufahije is a traditional Bosnian dessert that has captured the hearts and taste buds of many. Originating from the Ottoman Empire era, this dish showcases the deep cultural connection and culinary blending of East and West. The name "tufahija" comes from the Arabic word "tuffah," meaning apple. This dessert beautifully presents the combination of poached apples with a walnut-enriched filling, all topped with sweetened cream. It's a dessert known for its charming presentation and delightful taste.
Ingredients
- Apples - 4 large, firm
- Sugar - 200g
- Water - 500ml
- Walnuts - 100g, finely chopped
- Lemon - 1, juiced
- Cinnamon stick - 1
- Whipped cream - 200ml
- Vanilla extract - 1 tsp
- Butter - 50g, melted
Preparation
Step 1: Preparing the Apples
Start by taking the apples and washing them thoroughly. Using an apple corer, remove the core from each apple without cutting through the bottom. This process creates a hollow space for the filling. Be gentle to maintain the structure of the apples.
Step 2: Poaching the Apples
In a large saucepan, combine water, sugar, and the juice of a lemon. Add one stick of cinnamon for extra flavor. Bring the mixture to a gentle boil and stir until the sugar is completely dissolved.
Place the hollowed apples in the poaching liquid and cover the saucepan. Allow them to poach at a low simmer for approximately 15-20 minutes or until the apples are tender yet firm enough to hold their shape.
Step 3: Preparing the Walnut Filling
While the apples are poaching, prepare the walnut filling. In a mixing bowl, combine finely chopped walnuts, melted butter, and a tablespoon of sugar. Mix the ingredients thoroughly until they become a thick, coarse paste.
Step 4: Filling the Apples
Once the apples are poached, carefully remove them from the saucepan and let them cool slightly. Using a spoon, fill each hollow apple with the prepared walnut mixture. Pack the filling firmly to ensure each apple is generously stuffed.
Step 5: Preparing the Cream Topping
In a small mixing bowl, whip the cream with a teaspoon of sugar and a dash of vanilla extract until soft peaks form. This sweetened cream will add a delightful richness to your tufahije.
Step 6: Assembling Tufahije
Place the stuffed apples onto a serving platter. Generously dollop the whipped cream over each apple, letting it gently cascade down the sides.
How to Enjoy
Tufahije is best enjoyed chilled, making it a refreshing end to any meal or a sweet treat on a warm day. For an added touch of elegance, sprinkle some extra chopped walnuts or a light dusting of cinnamon on top. Serve each tufahija in a bowl to contain its delectable juices and savor each spoonful, delighting in the balance of sweet, tart, and creamy textures.
Whether shared at a family gathering or savored alone as a personal indulgence, tufahije truly captures the essence of Bosnian hospitality and culinary tradition.
