Zhejiang Sesame Tofu Cubes
History and Background
Zhejiang cuisine, one of the Eight Culinary Traditions of China, is renowned for its fresh and sophisticated flavors. Known for its focus on seasonal ingredients, Zhejiang dishes often highlight the natural taste of the produce. Sesame Tofu Cubes have their roots in this culinary tradition, offering a subtle yet savory flavor profile that showcases the delicate textures of tofu.
Ingredients
- Tofu - 500g, preferably firm variety
- Soy Sauce - 3 tablespoons
- Sesame Oil - 3 teaspoons
- Rice Vinegar - 2 tablespoons
- Sugar - 1 teaspoon
- Garlic - 2 cloves, minced
- Sesame Seeds - 2 tablespoons, toasted
- Green Onions - 2, chopped
- Ginger - 1-inch piece, grated
- Cornstarch - 2 tablespoons
- Vegetable Oil - for frying
Preparation
Step 1: Marinating the Tofu
Begin by pressing the tofu to remove excess water. Wrap it in a clean kitchen towel and place a heavy object on it for about 30 minutes. Once pressed, cut the tofu into 1-inch cubes. In a bowl, mix soy sauce, sesame oil, rice vinegar, and sugar. Add minced garlic and grated ginger to the marinade. Submerge the tofu cubes in this marinade for at least 1 hour, turning occasionally to ensure even coverage.
Step 2: Preparing the Dredging Materials
While marinating, prepare a dredging station. Place cornstarch in a shallow dish. This will provide a crispy coating for the tofu cubes when fried.
Cooking Process
Step 3: Frying the Tofu
Heat a pan with enough vegetable oil to submerge the tofu cubes halfway. Remove the cubes from the marinade, letting excess marinade drip off. Dredge each cube in cornstarch until thoroughly coated. Test the oil temperature by dropping a small piece of tofu; it should sizzle immediately. Fry the dredged cubes in batches to avoid overcrowding the pan, and cook until golden and crispy on all sides. Remove the cooked cubes and place them on a paper towel-lined plate to drain excess oil.
Step 4: Toasting the Sesame Seeds
In a dry pan, toast the sesame seeds over medium heat until golden brown and fragrant. This should take about 3-5 minutes, stirring frequently to prevent burning.
Step 5: Final Assembly
In a large bowl, toss the fried tofu cubes with toasted sesame seeds and chopped green onions. Ensure even distribution so each cube is coated with the nutty flavor of the sesame.
