Zumaak is a traditional Middle Eastern dish, renowned for its comforting and heartwarming qualities. The origins of Zumaak can be traced back to centuries-old culinary practices in the region. Typically, this dish is a slow-cooked stew that brings together the bold flavors of spices, meat, and vegetables. Zumaak is often enjoyed as a family meal and is a staple during festive occasions.
Ingredients
- Meat - 1 kg (lamb or beef, cut into cubes)
- Vegetable Oil - 2 tablespoons
- Onion - 2 large, finely chopped
- Garlic - 4 cloves, minced
- Spices - turmeric, cumin, coriander (1 teaspoon each)
- Tomatoes - 4, chopped
- Potatoes - 2, peeled and cubed
- Carrots - 3, sliced
- Chickpeas - 1 cup, soaked overnight
- Beef or Vegetable Stock - 4 cups
- Salt - to taste
- Black Pepper - to taste
- Fresh Parsley - for garnish, chopped
Preparation Instructions
Step 1: Preparing the Meat
Start by heating the vegetable oil in a large pot over medium heat. Add the onion and sauté until it becomes translucent. Stir in the garlic and continue to cook for another 2 minutes until fragrant.
Step 2: Cooking the Meat
Add the meat cubes to the pot and brown them on all sides. This should take about 5-7 minutes. Once browned, stir in the spices - turmeric, cumin, and coriander. Mix well to coat the meat evenly with spices.
Step 3: Adding Vegetables and Stock
Add the tomatoes, potatoes, and carrots to the pot. Stir to combine all ingredients together. Pour in the stock and bring to a gentle simmer.
Step 4: Simmer and Cook
Reduce the heat to low, cover the pot, and let the Zumaak stew for approximately 2 to 3 hours. Stir occasionally and add the soaked chickpeas halfway through the cooking process. Check the meat for tenderness, ensuring it becomes melt-in-your-mouth soft.
Serving Suggestions
Once the Zumaak is ready, season with salt and black pepper to taste. Garnish with freshly chopped parsley before serving. This dish is best enjoyed with warm flatbread or over a bed of steamed rice. Pair it with a side salad or pickled vegetables to enhance the flavors.
