Ajvar Harmony
Ajvar is a vibrant and versatile condiment originating from the Balkan region and is particularly popular in Serbia, Macedonia, and Croatia. This delicious mixture is typically made using a combination of roasted red bell peppers, eggplants, and garlic, creating a smoky and slightly sweet flavor that complements a variety of dishes. Traditionally, Ajvar is prepared during the autumn months when red bell peppers are in abundance. It is often enjoyed as a spread on fresh breads, a side to grilled meats, or a topping for a variety of foods.
Ingredients
- Red bell peppers: 4 large
- Eggplants: 2 medium-sized
- Garlic: 3 cloves
- Olive oil: 1/4 cup
- Salt: to taste
- Vinegar: 1 tablespoon
- Red chili peppers (optional): 1-2 for heat
Preparation
Roasting the Vegetables
1. Preheat your oven to 400°F (200°C). Arrange the red bell peppers and eggplants on a baking sheet. Roast the vegetables until their skins are charred and blistered, about 30-40 minutes, turning them occasionally.
2. Remove the roasted vegetables from the oven and immediately place them in a bowl. Cover with a lid or plastic wrap to steam for about 15 minutes. This will help in peeling their skins off easily.
Peeling and Preparing the Base
3. Peel the charred skin from the red bell peppers and eggplants. Remove the seeds from the red bell peppers. Place the peeled vegetables in a food processor.
4. Add the garlic cloves, and if desired, add the red chili peppers too. Blend until smooth but still retaining a bit of texture.
Cooking Process
Simmering the Ajvar
5. Transfer the vegetable mixture to a large pan. Add the olive oil and season with salt to taste. Place the pan over low to medium heat.
6. Simmer the mixture gently, stirring frequently to prevent sticking for approximately 45 minutes to an hour. As the flavors meld, the Ajvar will deepen in color and consistency.
Final Touches
7. Stir in the vinegar towards the end of the cooking process. Adjust seasonings as needed. Continue cooking for another 10 minutes.
8. Remove the pan from heat and allow the Ajvar to cool slightly.
Enjoying Your Ajvar
9. Once the Ajvar has cooled, it can be stored in sterilized jars in the refrigerator for up to two weeks.
10. Serve this delightful condiment as a spread on crusty bread, paired with cheeses, or alongside grilled meats and vegetables. Ajvar also makes a wonderful addition to sandwiches and wraps.
11. Consider serving Ajvar at room temperature for the best flavor experience.
Cooking Time and Storage
You can use a cooking timer to keep track of the roasting and simmering time to ensure a perfectly cooked Ajvar. Enjoy the harmony of flavors with every bite!
