Baasto Suuga
Background and History
Baasto Suuga is a classic Somali pasta dish, blending Italian influences with traditional Somali flavors. Having been introduced to the region during the Italian colonization, pasta became a staple in Somali cuisine. The Somali spin includes a spiced tomato-based sauce, often infused with aromatics and spices indigenous to the area.
Ingredients
- Baasto (Pasta) - 500g
- Tomato Sauce - 2 cups
- Onion - 1 large, finely chopped
- Garlic - 4 cloves, minced
- Green Pepper - 1, chopped
- Ground Beef - 300g
- Olive Oil - 3 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cardamom - 1/2 teaspoon
- Cloves - 1/2 teaspoon
- Salt - to taste
- Black Pepper - to taste
- Fresh Parsley - for garnish
Preparation
To begin preparing your Baasto Suuga, gather all necessary ingredients. This will ensure a smooth cooking process. Chop the onion, green pepper, and mince the garlic. Set these aside as you prepare the rest of the ingredients.
Cooking the Pasta
- Start by boiling water in a large pot for the baasto. Once the water reaches a rolling boil, add a pinch of salt and the pasta to the pot.
- Cook the pasta for about 8-10 minutes or until al dente, as per the package instructions. Set a timer to avoid overcooking.
- Once the pasta is cooked, drain and rinse it under cold water to stop the cooking process. Set aside.
Preparing the Suugo Suqaar (Sauce)
- In a large skillet, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add the garlic and green pepper, continuing to sauté for another 2-3 minutes.
- Introduce the ground beef to the skillet, breaking it apart with a spatula. Cook until browned all over.
- Stir in the cumin, coriander, cardamom, and cloves. Mix thoroughly to coat the beef with spices.
- Add the tomato sauce and season with salt and black pepper to taste. Allow the sauce to simmer for 15 minutes, stirring occasionally, until it thickens slightly.
Combining and Serving
- Add the cooked pasta to the sauce, tossing gently to coat every strand with the suugo.
- Let it heat through for about 2 minutes, then remove from the heat.
- Serve hot, garnished with fresh parsley.
