Balichã Mismatch is a fusion dish that combines elements from different culinary traditions to create a unique flavor profile. Originating from the vibrant streets of Lisbon, it integrates the spicy, tangy notes of the traditional Goan balichão with the savory, rich components of a classic Portuguese feijoada. It was born out of cultural exchanges during the colonial period, where Portuguese explorers were introduced to Goan cuisines. Over the years, chefs have put their own spin on this dish, leading to the creation of what we now call Balichã Mismatch.
Ingredients for Balichã Mismatch
- Pork - 500g, diced
- Chorizo - 150g, sliced
- Kidney beans - 250g, canned or boiled
- Balichão paste - 3 tablespoons
- Onion - 1 large, chopped
- Garlic - 4 cloves, minced
- Tomato - 2 large, diced
- Bay leaf - 2 leaves
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Rice - to serve
Preparation
Step 1: Marinate the Pork
Place the pork in a large bowl and mix it with 2 tablespoons of balichão paste, a pinch of salt, and a dash of black pepper. Ensure the pork is thoroughly coated. Cover the bowl and let it marinate in the fridge for at least 1 hour.
Step 2: Prepare the Ingredients
While the pork is marinating, chop the onion, mince the garlic, and dice the tomatoes. Slice the chorizo and set it aside.
Cooking Process
Step 3: Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the onion and cook until translucent. Add the garlic and sauté for another minute. Stir in the cumin and paprika.
Step 4: Cook the Meats
Add the marinated pork to the pot and brown on all sides. Next, add the chorizo and allow it to release its oils. Stir in the remaining tablespoon of balichão paste.
Step 5: Add Tomatoes and Beans
Mix in the tomatoes and cook until they start to break down. Add the kidney beans and bay leaves and mix well to combine everything.
Step 6: Simmer
Reduce the heat to low and let the mixture simmer for 30-40 minutes, until the pork is tender and the sauce has thickened. Remember to occasionally stir the pot. You may want to set a cooking timer to remind yourself.
Step 7: Final Touches
Season the dish with salt and black pepper to taste. Stir in the fresh coriander just before serving.
