• Water - 450ml

Preparation

Step 1: Preparing the Dough

In a large bowl, combine wheat flour and rye flour. In a separate bowl, mix warm water, yeast, and honey. Allow the mixture to sit for about 5 minutes until the yeast is activated and frothy. Add the yeast mixture to the flour, along with the sourdough starter, and salt. Mix until a rough dough forms.

Step 2: Kneading the Dough

Transfer the dough to a floured surface and knead by hand for 10-15 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook on low speed for 10 minutes. If the dough is too sticky, sprinkle a bit more flour sparingly.

Step 3: First Rise

Grease a large bowl with cooking oil and place the dough inside. Cover with a damp cloth and let it rise in a warm, draft-free place for about 1-2 hours or until it has doubled in size.

Step 4: Shaping the Loaf

Once risen, gently punch down the dough to release air. Shape it into a round loaf. Place the loaf on a piece of parchment paper and cover it again for a second rise, about 30-45 minutes.

Step 5: Preparing to Bake

Preheat your oven to 220°C (430°F). If using a baking stone, place it in the oven to heat up. Alternatively, you can use a Dutch oven; preheat it empty.

Slash the top of the loaf with a sharp knife to allow for expansion. Transfer the loaf, on its parchment paper, onto the preheated baking stone or into the Dutch oven. Bake for 30-40 minutes. If using a Dutch oven, cover it for the first 20 minutes to trap steam, then uncover for the remaining time to develop a deep, golden crust.
