Bayerischer Essigbraten
Introduction
Bayerischer Essigbraten, also known as Bavarian Vinegar Roast, is a traditional German dish hailing from the beautiful region of Bavaria. This hearty and flavorful roast is characterized by its unique marinade, which primarily features vinegar, imparting a tangy and rich taste to the meat. The dish is deeply rooted in Bavarian culinary traditions and is often enjoyed during special occasions or festive gatherings.
Historically, vinegar has been used in Bavarian cuisine not only as a flavor enhancer but also as a natural preservative. The method of marinating meat in vinegar can be traced back to times when refrigeration was not available, making this recipe a wonderful showcase of traditional preservation techniques that have been loved for generations.
Ingredients
- 1.5 kg beef roast
- 300 ml red wine vinegar
- 500 ml water
- 2 large onions
- 2 large carrots
- 2 stalks of celery
- 4 cloves garlic
- 5 whole cloves
- 2 bay leaves
- 10 black peppercorns
- 2 tablespoons sugar
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- 3 tablespoons all-purpose flour
- 500 ml beef broth
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Marinade Preparation
Step 1: Prepare Vegetables and Aromatics
Peel and roughly chop the onions, carrots, and celery. Peel and crush the garlic cloves.
Step 2: Create Marinade
In a large mixing bowl, combine the red wine vinegar, water, prepared vegetables, and garlic. Add the whole cloves, bay leaves, black peppercorns, and sugar. Stir well to combine.
Step 3: Marinate the Beef
Place the beef roast in a large resealable plastic bag or a deep non-metallic dish. Pour the vinegar marinade over the beef, ensuring it is fully submerged. Seal the bag tightly or cover the dish, and refrigerate for at least 24 to 48 hours. Turn the beef occasionally to ensure even marinating.
Cooking Process
Step 1: Preheat and Prepare
Preheat your oven to 160°C (320°F). Remove the marinated beef from the refrigerator and allow it to come to room temperature. Strain the marinade to separate the liquid from the solids, reserving both components.
Step 2: Brown the Beef
In a heavy ovenproof pot or Dutch oven, heat vegetable oil over medium-high heat. Sear the beef on all sides until browned, ensuring the surface develops a rich crust. Remove the beef from the pot and set aside.
Step 3: Cook Vegetables
In the same pot, add the reserved vegetables from the marinade and sauté over medium heat until they begin to caramelize.
Step 4: Create the Sauce
Add the all-purpose flour to the pot, stirring constantly to form a roux. Gradually pour in the reserved marinade liquid and beef broth, whisking continuously to prevent lumps. Add the dried rosemary and dried thyme. Season with salt and black pepper to taste. Bring the mixture to a simmer.
Step 5: Roast in Oven
Return the beef to the pot, ensuring it is partially submerged in the sauce. Cover the pot with its lid and place it in the preheated oven. Roast the beef for approximately 2.5 to 3 hours, or until it is tender and can easily be pulled apart with a fork. Visit cooking timer to set a reminder for the cooking duration.
Step 6: Finishing Touch
Once cooked, remove the pot from the oven. Transfer the beef to a carving board, cover with aluminum foil, and let it rest for 15 minutes. Meanwhile, continue simmering the sauce on the stovetop to thicken if needed.
Serving Suggestions
Slice the rested beef into thick portions and serve on a platter. Drizzle the rich vinegar sauce generously over the slices. Bayerischer Essigbraten pairs beautifully with traditional sides such as dumplings, red cabbage, or mashed potatoes, making it a perfect centerpiece for any Bavarian-themed meal.
