Preparation
Start by preparing the chicken breast. Slice it thinly and place it in a bowl. Add the curry powder, turmeric, and a pinch of salt. Toss the chicken breast until well-coated with the spices. Let it marinate while you prepare the other ingredients.
Cooking Process
- Heat a large pan over medium-high heat. Add the marinated chicken breast and sear for about 3-4 minutes on each side until golden brown. Remove the chicken breast from the pan and set aside.
- In the same pan, add a drizzle of vegetable oil. Sauté the onion until translucent.
- Add the garlic and ginger, cooking until fragrant.
- Stir in the red bell pepper and green bell pepper. Cook for about 5 minutes until they begin to soften.
- Add the tomato, and return the chicken breast to the pan.
- Pour in the coconut milk, stir well, and bring the mixture to a gentle simmer.
- Reduce the heat and allow the dish to simmer for 20 minutes, or until the chicken breast is cooked through, stirring occasionally.
- Season the dish with salt and black pepper to taste. Add a squeeze of lime.
- Garnish with fresh coriander.
