Chuchvara Peppermint
Background and Description
Chuchvara Peppermint is a modern twist on the traditional Chuchvara, a beloved dumpling dish primarily known in Central Asian cuisine. Traditional Chuchvara is similar in style to ravioli or pelmeni and is often filled with lamb or beef. Chuchvara is enjoyed during large family gatherings and festive occasions. The vibrant addition of peppermint adds a refreshing touch, providing a unique aromatic experience with every bite. This contemporary version maintains the cultural significance of the dish while introducing innovative flavors.
Ingredients
- Flour - 2 cups
- Egg - 1 large
- Water - 1/2 cup
- Salt - 1 teaspoon
- Ground Lamb - 250 grams
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Black Pepper - 1/2 teaspoon
- Peppermint - 1 tablespoon, chopped
- Oil - 2 tablespoons
- Broth (chicken or vegetable) - 2 cups
Preparation
Dough Preparation
In a large bowl, combine the flour and salt. Make a well in the center and add the egg and half of the water. Gradually combine the ingredients until a dough forms. Add more water as necessary to achieve the desired texture. Knead the dough until it is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
Filling Preparation
In a mixing bowl, combine the ground lamb, onion, garlic, black pepper, and peppermint. Mix well until all ingredients are evenly incorporated.
Cooking Process
Roll out the dough on a lightly floured surface, into a thin sheet. Using a round cutter or a glass, cut out circles of dough. Place a small spoonful of the meat mixture in the center of each dough circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal them.
- In a large pot, heat the oil over medium-high heat.
- Add the prepared chuchvara to the pot, and cook until they start to crisp up and turn golden brown.
- Pour in the broth and reduce the heat to medium-low. Cover the pot and let the chuchvara cook for about 10 minutes.
- Check if they are cooked through. If needed, allow them to simmer a few more minutes.
