Ingredients

- Garlic - 4 cloves, minced
- Olive oil - 3 tablespoons
- Shrimp - 1 lb, peeled and deveined
- Octopus - 1/2 lb, pre-cooked and sliced
- Lemon juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Chicken or seafood stock - 1 cup
- Pork cracklings - 1/2 cup, crushed
- Butter - 2 tablespoons
Preparation
Begin by preparing the plantains. Cut off both ends and slice lengthwise to remove the peel before chopping them into even pieces. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the plantains and fry until golden brown, roughly 4-5 minutes each side. Remove and drain on paper towels.
Cooking Process
Mashing the Mofongo
In a traditional mortar and pestle (or a mixing bowl and masher), combine the fried plantains, minced garlic, and crushed pork cracklings. Mash until the mixture is well integrated into a rough, chunky texture.
Preparing the Seafood
In a separate pan, heat the remaining tablespoon of olive oil and 2 tablespoons of butter. Add the shrimp, sprinkle with salt, and black pepper, and cook for 2 minutes. Then, add the octopus and cook for another 2 minutes. Add lemon juice and stock, cooking until the seafood is opaque and tender, about 4-5 minutes. Stir in cilantro for a burst of freshness right at the end.
Assembly and Presentation
Form a well in the center of each serving of mashed plantains and spoon the seafood mixture into the center, allowing the gravy to drizzle over it. Garnish with more cilantro if desired.
