Ingredients
- Quinoa - 1 cup
- Chicken Breast - 2 pieces
- Red Bell Pepper - 1 medium
- Corn - 1 cup
- Black Beans - 1 cup
- Onion - 1 medium
- Garlic - 2 cloves
- Lime - 1
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Salt - to taste
- Black Pepper - to taste
- Olive Oil - 2 tablespoons
- Avocado - 1, optional for garnish
Preparation
Step 1: Prepare the Quinoa
Rinse the quinoa thoroughly under cold water to remove its natural coating, called saponin, which can give a bitter taste. In a medium saucepan, combine 2 cups of water with the rinsed quinoa. Bring to a boil over medium heat, then reduce the heat to low and cover. Simmer for about 15 minutes or until all the water is absorbed and the quinoa is fluffy.
Step 2: Cook the Chicken
While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breast with salt, black pepper, cumin, and paprika. Cook the chicken breast for about 6-7 minutes on each side, or until fully cooked and no longer pink inside. Let it rest, then dice into bite-sized pieces.
Step 3: Sauté Vegetables
In the same skillet, add another tablespoon of olive oil. Sauté the onion and garlic until translucent and fragrant. Add the red bell pepper and corn, cooking for another 5 minutes until they are softened.
Step 4: Mix Ingredients
In a large bowl, combine the cooked quinoa with the sautéed vegetables, diced chicken, and black beans. Mix in the juice of the lime and cilantro. Stir well to ensure everything is evenly mixed and the flavors meld together.
Cooking Process
After preparing and mixing all the ingredients, transfer the mixture to a baking dish. Bake in a preheated oven at 350°F (175°C) for about 20 minutes. This will help to meld the flavors and allow the spices to infuse into the dish. You can set a timer to ensure you don't overcook the casserole.
