Begin by blanching the almonds to remove their skins. Boil a pot of water, then add the almonds for 1-2 minutes. Drain and rinse under cold water, ensuring they are cool enough to handle. Gently squeeze each almond to slip off the skin, then place them on a clean towel to dry.
Step 2: Making the Sugar Syrup
In a heavy-bottomed saucepan, combine the sugar and water. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Add the lemon juice to prevent crystallization. Bring the syrup to a gentle simmer, monitoring its temperature with a candy thermometer. Aim for a soft ball stage, around 115°C (239°F).
Step 3: Coating the Almonds
Remove the saucepan from heat and allow it to cool slightly. Add the blanched almonds into the syrup, stirring until all are well-coated. If desired, add a few drops of food coloring to create vibrantly colored dragées. Spread them out on a baking sheet lined with parchment paper to cool completely.
Cooking Process
Step 4: Drying the Coated Almonds
Preheat your oven to the lowest setting. Place the coated almonds on the baking sheet and place them in the oven for about 30 minutes. The low temperature helps to dry and harden the sugar coating without melting it. Use a cooking timer to track the drying time.
Step 5: Finishing Touches
After drying, remove the dragées from the oven and allow them to cool to room temperature. Once cooled, they can be stored in an airtight container for up to a month.
