1. Preparing the Dough

Mix all-purpose flour, golden syrup, lye water, and peanut oil in a bowl until it forms a smooth dough. Allow the dough to rest for at least an hour to relax the gluten.

2. Preparing the Filling

Divide the lotus seed paste into portions and wrap it around each salted egg yolk. Roll the balls in a mixture of black sesame seeds and almond powder to create the filling center.

Assembly

Divide the rested dough into smaller portions. Flatten each portion into a circle and carefully wrap it around the filling balls, sealing it completely. Mold the sealed balls with a mooncake mold to create the iconic shape and patterns.

Cooking Process
