Ingredients
- Spinach - 2 cups, packed

Preparation
Step 1: Prepare the Green Mixture
Blanch the spinach by pouring boiling water over it and letting it sit for about 2 minutes. Drain and immediately place it in ice water to halt the cooking process. Drain well and pat dry. In a food processor, combine the spinach, basil, olive oil, lemon juice, and lemon zest. Process until smooth.
