Feijoada Paulista

Preparation
Prepare the Ingredients
Submerge the black beans in a large bowl of water and soak them overnight. This helps soften the beans and reduces the overall cooking time.
On the day of cooking, chop all the meats: the pork belly, smoked sausage, ribs, and beef into bite-sized chunks. Dice the bacon and onion, and mince the garlic.
Cook the Meats
In a large heavy-bottomed pot, render the bacon over medium heat until crispy. Remove the crispy bits and set aside, leaving the fat in the pot.
Brown the pork belly, ribs, and beef in batches until all pieces have a nice sear.
Cook the Beans
Add the soaked black beans to the pot, along with fresh water just enough to cover them. Stir in the browned meats, chopped onion, minced garlic, and bay leaves.
Simmer
Bring the mixture to a boil and then reduce to a low simmer. Cover the pot and let the stew cook gently for about 2 to 3 hours, stirring occasionally. The beans should be tender, and the meats should be falling apart.
Add the sliced smoked sausage halfway through the cooking process.
Season and Serve
Stir in the orange zest and season with salt and black pepper to taste. Remove the bay leaves before serving.
Feijoada Paulista is traditionally served with white rice, collard greens, and slices of orange. Sprinkle the crispy bacon bits, parsley, and scallions over the dish for added flavor.
