Fenek Fnar
Background
Fenek Fnar is a traditional Maltese dish that celebrates the use of rabbit in a stew-like form. Originating from the island of Malta, where rabbit meat is highly esteemed, this dish brings together flavors of the Mediterranean with a rustic and hearty allure. "Fenar" in Maltese refers to the method of braising or slow-cooking, which allows the rabbit meat to become tender and succulent. Historically, rabbit has been a significant source of protein for the Maltese, especially during times when other meats were scarce. Fenek Fnar is often prepared for family gatherings and local festivals, reflecting the communal spirit typical of Mediterranean culture.
Ingredients
- Rabbit - 1 whole, approximately 1.5 kg, cut into pieces
- Onions - 2 large, finely chopped
- Garlic - 4 cloves, minced
- Olive Oil - 4 tablespoons
- Red Wine - 500 ml
- Tomato Paste - 2 tablespoons
- Tomatoes - 200 grams, diced
- Carrots - 2, chopped
- Potatoes - 3 medium, peeled and cubed
- Bay Leaves - 2
- Rosemary - 1 teaspoon, dried
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black Pepper - to taste
Preparation
Start by preparing the rabbit, ensuring it is clean and cut into even-sized pieces for consistent cooking. Season the rabbit pieces with salt and black pepper to taste. Allow the rabbit to marinate for at least half an hour.
Cooking the Fenek Fnar
- In a large pot, heat olive oil over medium heat. Add the onions and cook until translucent.
- Add garlic and sauté for an additional 1-2 minutes until fragrant.
- Increase the heat to medium-high and add the rabbit pieces. Brown the rabbit on all sides. This process creates a fond at the bottom of the pot which adds depth of flavor to the stew.
- Pour in the red wine to deglaze the pot, scraping up any browned bits stuck to the pot's base. Allow it to simmer for about 5 minutes, or until the red wine reduces by half.
- Stir in the tomato paste and tomatoes followed by the carrots, potatoes, bay leaves, rosemary, and thyme. Add enough water to just cover the ingredients.
- Bring the pot to a gentle boil, then reduce the heat to low. Cover and let it simmer gently for 2-3 hours or until the rabbit is tender. Ensure to check occasionally, stirring to prevent sticking, and adding a bit more water if needed.
As the rabbit cooks, the sauce will thicken and the flavors will meld beautifully, creating a rich, intensely flavorful stew. Refer to the cooking timer to track your stew's progress.

This communal dish is perfect for family gatherings. Serve it in the pot at the table, allowing guests to help themselves. Traditionally, it is accompanied by a fresh green salad dressed lightly with olive oil, lemon juice, and a sprinkle of salt.
