Preparation of Fouggara Blend
Preparing the lamb is an essential part of the process. Begin by washing and patting dry the lamb, then cut it into medium-sized cubes. Set aside as you prepare the other ingredients. Arrange your chopped onion, garlic, and chopped tomatoes to have everything ready for the seamless cooking experience.
Spice Mix Preparation
The spice mix is what brings the unique flavor profile to the Fouggara Blend. In a small bowl, combine cumin, paprika, salt, and black pepper. Mix well and set aside.
Cooking Process of Fouggara Blend
Browning the Lamb
Heat olive oil in a large pot over medium heat. Add the lamb cubes, ensuring they are spread out evenly to brown on all sides. This will take about 5 to 7 minutes. Once browned, remove the lamb from the pot and set it aside.
Sautéing the Vegetables
In the same pot, add more olive oil if necessary. Sauté the onions until they are translucent. Add the garlic and sauté for another minute until fragrant. Stir in the chopped tomatoes and cook until they become soft and start to break down.
Building the Stew
Return the lamb to the pot. Add the prepared spice mix, coating the lamb and vegetables evenly. Pour in the water and add the potatoes and carrots. Stir all the ingredients together and bring them to a gentle boil.
Slow Cooking
Once boiling, reduce the heat to low, cover the pot, and allow it to simmer for approximately 2 to 3 hours. Monitor with a cooking timer to ensure perfect cooking. Occasionally stir the stew, ensuring no sticking occurs at the bottom, and check if the lamb is tender.
Serving and Enjoying the Fouggara Blend
Before serving, stir in the coriander for a fresh burst of flavor. The Fouggara Blend is best enjoyed hot, accompanied by warm bread or couscous on the side to capture the delightful stew. This dish not only offers a journey through traditional Algerian flavors but also enhances communal dining experiences with its rich taste and comforting warmth.
