Ingredients
- Rice Flour: 100g
- Sugar: 80g
- Matcha Powder: 10g
- Red Bean Paste: 150g
- Milk: 250ml
- Gelatin: 5g

- Strawberries: 100g, for garnish
- Mint Leaves: few, for garnish
Preparation
Preparing the Matcha Gelatin Base
Start by dissolving the gelatin in a small bowl with 50ml of warm water. Stir gently and let it bloom for about 5 minutes until it becomes a jelly-like consistency. In a medium saucepan, heat the milk over low heat. Add the sugar and salt, and stir until completely dissolved. Mix in the bloomed gelatin and continue stirring until itβs fully dissolved in the milk. Remove from heat and let it cool slightly.
Mixing in the Matcha
Sift the matcha powder into the mixture, ensuring there are no lumps. Whisk until the mixture is smooth and even. Add the vanilla extract for an added depth of flavor.
Creating the Mold
Pour a thin layer of the matcha gelatin mixture into a desired mold and allow it to set slightly. Meanwhile, prepare the red bean paste by forming small balls that will fit within the mold.
Layering with Red Bean Paste
Once the first layer has started to set, place a ball of red bean paste in the center of each mold section. Carefully pour the remaining matcha gelatin mix over the top, covering the red bean paste balls completely. Allow the molds to set in the refrigerator for at least 4 hours or overnight for the best texture.
Serving
Once set, gently remove the sweets from their molds. Decorate each piece with strawberries and mint leaves for a fresh and colorful presentation. Serve chilled for a refreshing and indulgent treat.
