Step 1: Preparing the Dough

  1. In a large mixing bowl, combine yeast with warm milk. Let it sit for about 10 minutes until it becomes frothy.
  2. Add sugar, melted butter, and vanilla extract to the mixture. Stir until well blended.
  3. Gradually add the flour and salt to the liquid mixture. Knead until you have a smooth and elastic dough. This should take about 10 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for about 1 to 2 hours, or until it doubles in size.

Step 2: Preparing the Filling

  1. While the dough is rising, prepare the filling. In a bowl, combine 1/2 cup of sugar and 1/2 cup of softened butter until it forms a creamy consistency.

Step 3: Assembling the Gata

  1. Once the dough has doubled in size, punch it down to release the air and divide it into two equal parts.
  2. Roll one part of the dough into a rectangular shape, approximately 1/4 inch thick.
  3. Spread half of the filling evenly over the dough. Roll the dough from one end to the other, creating a log.
  4. Repeat the process with the second half of the dough.
  5. Cut each log into 2-inch pieces and place them onto a baking sheet lined with parchment paper.

Step 4: Baking

  1. Preheat your oven to 350°F (175°C).
  2. Bake the gata pastries for about 25-30 minutes or until golden brown.
