- Thyme - 2 tsp fresh thyme
- Bay Leaves - 2 bay leaves
- Beef Stock - 1 liter of beef stock
- Olive Oil - 2 tbsp of olive oil

Preparation
The preparation is the heart of achieving the rich flavors of the Gippsland Dream. Start by preparing the ingredients: slice the carrots, peel and quarter the potatoes, chop the celery, and dice the onions. Mince the garlic. These fresh ingredients will form the robust base of the dish.
Marinating the Beef
To marinate, place the 500g of beef brisket in a bowl with the 250ml of red wine, fresh thyme, and 1 tablespoon of olive oil. Marinate for at least 2 hours, or overnight for enhanced flavor.
Cooking Process
Step 1: Searing the Beef
In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the beef once hot and sear all sides until brown. Remove the beef and set aside.
Step 2: Cooking the Vegetables
In the same pot, add the onions, carrots, celery, and garlic. Sauté for about 5 minutes until fragrant and the onions are translucent.
Step 3: Combining Ingredients
Return the beef to the pot, along with the marinating liquid. Add the beef stock and bay leaves. Bring to a boil, then reduce to a simmer. Cover and let cook for 2 hours, stirring occasionally. Don’t forget to set your cooking timer!
Step 4: Adding the Potatoes
After 2 hours, add the potatoes to the pot. Continue cooking for an additional 30 minutes until the potatoes and beef are tender.
