Guangdong Tea Scrolls

Ingredients
- Glutinous Rice - 2 cups
- Green Tea Leaves - 2 tablespoons
- Chicken Breast - 200 grams
- Light Soy Sauce - 2 tablespoons
- Oyster Sauce - 1 tablespoon
- Fresh Ginger - 1 piece, sliced
- Scallions - 3 stalks, chopped
- Dried Shiitake Mushrooms - 5, rehydrated and sliced
- Sugar - 1 teaspoon
- Sesame Oil - 1 teaspoon
- Salt - to taste
- White Pepper - to taste
- Bamboo Leaves - For wrapping
- Cooking Twine - As needed
Preparation
Step 1: Preparing the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice for at least 4 hours or overnight. Drain well.
Step 2: Preparing the Filling
Slice the chicken breast into thin strips. Combine with light soy sauce, oyster sauce, sugar, salt, and white pepper. Let it marinate for at least 20 minutes.
In a heated skillet, add sesame oil and sauté the ginger slices until aromatic. Add the scallions and shiitake mushrooms, cooking until soft. Add the marinated chicken and cook until done. Set aside to cool.
Assembling the Tea Scrolls
Soak the bamboo leaves in water until pliable. Take two leaves, overlapping them, to form a cone shape. Add a layer of rice, then a spoonful of the chicken mixture, followed by another layer of rice. Fold the leaves tightly around the contents and secure with cooking twine.
Cooking Process
Place the wrapped scrolls into a steamer and steam for about 1.5 hours. Check periodically to ensure there is enough water in the steamer. Follow up with a cooking timer to ensure perfect timing.
