Hessen Schnecken

Ingredients
- Flour - 3 and ½ cups
- Granulated Sugar - ½ cup
- Salt - 1 teaspoon
- Yeast (instant dry) - 2 and ¼ teaspoons
- Milk (whole) - 1 cup, warmed to 110°F (43°C)
- Unsalted Butter - ½ cup, softened
- Egg - 2 large
- Ground Cinnamon - 2 tablespoons
- Brown Sugar - 1 cup, packed
- Vanilla Extract - 1 teaspoon
- Cream Cheese - 4 oz, softened
- Powdered Sugar - 2 cups
- Lemon Juice - 1 tablespoon
Preparation
Step 1: Making the Dough
- In a large mixing bowl, combine flour, sugar, and salt.
- In a separate bowl, mix warm milk with yeast and let it sit for 5 minutes until foamy.
- Pour the milk and yeast mixture into the flour, then add eggs and butter. Mix until the dough begins to form.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place in a greased bowl, cover it with a damp cloth and let it rise for approximately 1 hour, or until doubled in size.
Step 2: Preparing the Filling
- While the dough is rising, mix brown sugar and cinnamon in a small bowl.
- Set aside for later use.
Step 3: Shaping the Schnecken
- Once the dough has risen, roll it into a rectangle on a floured surface to about ¼ inch thickness.
- Spread the butter over the surface, leaving an inch border on one long side.
- Sprinkle the cinnamon and sugar mixture evenly over the buttered surface.
- Starting from the long edge with filling, tightly roll the dough into a log shape, pinching the seam closed.
- Using a sharp knife or floss, cut the roll into 12 equal pieces.
Step 4: Baking the Hessen Schnecken
- Place the rolls in a greased baking pan, cover, and let rise again for about 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake in the preheated oven for approximately 20–25 minutes or until golden brown.
